Keep the menu short
Eight to twelve items that a small kitchen can fire during a rush: fries, sandwiches, noodles, tea, cold drinks, a couple of desserts. Complexity kills ticket times and creates waste.
Attach rate is the KPI
Measure F&B per session, not only total kitchen sales. If tables are full and the kitchen is quiet, the floor is not offering, or ordering is too hard. Tie orders to the session in your POS so nothing is “on the house” by accident.
